Ingredients:
For the Crust:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
1 cup cold unsalted butter, cubed
1 large egg yolk
3-4 tablespoons ice water
For the Filling:
6 ripe pears, peeled, cored, and sliced
1/2 cup granulated sugar
1/4 cup light brown sugar
1/4 cup all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 tablespoon lemon juice
For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup light brown sugar
1/4 cup cold unsalted butter, cubed
1/2 teaspoon ground cinnamon
Instructions:
Prepare the Crust:
In a large bowl, mix flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
Add egg yolk and 3 tablespoons of ice water. Stir until dough forms, adding more water if needed.
Chill dough for at least 1 hour.
Prepare the Filling:
Preheat the oven to 375°F (190°C). In a large bowl, toss pear slices with granulated sugar, brown sugar, flour, ginger, cinnamon, and lemon juice.
Prepare the Streusel Topping:
In a bowl, mix flour, sugar, brown sugar, cinnamon, and cold butter. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
Assemble the Pie:
Roll out the dough and fit it into a 9-inch pie dish. Fill with the pear mixture and top with streusel.
Bake for 50-60 minutes, or until the topping is golden brown and the filling is bubbly. Let cool before serving.
